Apple Chunk Crumb Cake

This cake is perfect for summer gatherings or even better in the fall when the apples are in season.
Ingredients
- Cake:
- 1 3/4 cups sugar
- 3 eggs
- 1 tsp salt
- 4 peeled and diced raw apples (2 Granny Smith and 2 Golden Delicious)
- 3/4 cup canola oil
- 1/4 cup extra virgin olive oil
- 2 cups flour
- 1 tbsp cinnamon
- 1 tsp baking powder
- Topping:
- 1/4 cup margarine or butter
- 5 tbsp brown sugar
- 6 tbsp flour
- 1 tsp cinnamon
- 4 tbsp powdered sugar
- 1 1/2 tsp water

Cake: Beat sugar, oil and eggs together. Mix remaining ingredients into sugar mixture. Pour into a greased 9x13-inch pan. Bake at 375 degrees for 30-35 minutes or until light golden brown on top. Topping: Melt 1/4 cup of margarine or butter in a bowl. Mix flour, brown sugar and cinnamon in separate bowl with a fork. Slowly add to butter and mix with a fork until the mixture becomes crumbly. More flour or sugar may be added to mixture as needed. Sprinkle the mixture on top of the cake while still warm. Next mix the powdered sugar and water in a bowl and drizzle on top of cake using a spoon.
