Apple Streusel Cake

A nice brunch cake with apples and nuts baked in a marbled cake and topped with a citrus glaze.
Ingredients
- for the streusel:
- 1 c lt. brown sugar
- 1 c chopped apples
- 1 c sliced almonds, pecans, or walnuts (optional)
- 1/4 c all-purpose flour
- 1 tsp ground cinnamon
- 3 TBSP butter, melted
- Cake:
- 2 c all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 c (1 stick) butter, softened
- 1/2 c sugar
- 3 lg eggs
- 1/2 tsp vanilla extract
- 1/3 c orange juice
- Glaze:
- 1/2 c confectioners' sugar
- 2 1/2 tsp orange juice

Making the Streusel: 1. Preheat oven to 350*F. Grease a 9" or 10" tube pan. To prepare streusel, in a med. bowl, combine brown sugar, apples, almonds, flour and cinnamon. Stir in melted butter. Making the cake: 1. In a med. bowl, combine flour, baking powder, soda; mix well. In a large bowl, using an electric mixer set on medium speed, beat butter and sugar until light and fluffy. Add eggs, one at a time; beat well after each addition. Add vanilla. 2. Set mixer to low; alternately beat flour mixture and orange juice into egg mixture. Spoon half of batter into tube pan. Sprinkle w/half of streusel. 3. Spoon the remaining batter over the streusel, spreading to make an even layer marble pattern. 4. Bake for 15 min. Remove cake from oven; sprinkle top w/remaining streusel. Return cake to the oven; bake until a toothpick inserted in center comes out clean, about 30-35 min. Transfer to a wire rack; cool completely. Making the glaze: 1. Combine confectioners' sugar and orange juice. Mix well. Turn cake out onto a serving plate; invert to so streusel is on top. Drizzle glaze over cake; serve.
Notes: You may substitute chopped pears for the apples, or for a double treat try a combination of the two. **Streusel Muffins --alternate layer of batter and streusel mixture in a greased muffin tin, finishing w/a sprinkling of streusel mixture. Shorten the baking time. *Skillet apple cake-- use a cast iron skillet to bake the cake. Watch closely while baking as cast iron absorbs and retains heat more efficiently.
