Bourbon Chocolate Cake

Fix up a cake mix by adding cola, bourbon, and chocolate pieces. Use the same ingredients in the chocolate glaze that is poured over the warm cake.
 

Ingredients

  • 1 pkg. Swiss chocolate cake mix
  • 3 eggs
  • 2 Tbsp. cooking oil
  • 1 20 oz bottle cola
  • 1 1/2 tsp. vanilla
  • 3 Tbsp. bourbon plus 1/2 cup for glaze
  • 2 12-oz. pkg. semisweet chocolate pieces
  • 1 2-lb pkg. powderd sugar, sifted

Method

In a large bowl combine cake mix, eggs, oil, 1 1/3 cups cola, vanilla, and 3 tablespoons bourbon. Beat with an electric mixer until combined, then beat on medium speed for 2 minutes. Fold in 1 package chocolate pieces. Pour mixture into a 10-inch fluted tube pan and bake in a 350 degree oven for 35 to 40 minutes till cake pulls away from sides of pan while baking. Cool in pan on a wire rack for 10 minutes. Remove from pan and set aside. Place the remaining package of chocolate pieces in a medium saucepan. Add 1/2 cup bourbon and remaining cola. Heat over medium heat until melted and smooth. Gradually stir in powdered sugar. Using a fork, poke cake all over. Place a piece of waxed paper under cake. Pour glaze over cake while warm. Cool completely.

 

Notes: This is an easy cake and everyone who has had it loves it. Serve any remaining sauce over ice cream.
