Brown Sugar Pound Cake

This pound cake has both brown sugar and granulated sugar, with chopped pecans folded into the batter. It's finished with a powdered sugar icing.
 

Ingredients

  • 4 sticks (1 lb.) butter or margarine
  • 1 pkg (1 lb.) light brown sugar
  • 1/2 cup white (granulated) sugar
  • 5 eggs, separated
  • 3 cups flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup whole milk
  • 1 1/2 tsp vanilla
  • 1 cup chopped pecans
  • Icing:
  • 1 1/2 cup powdered sugar
  • 1/2 stick (1/4 cup) butter or margarine
  • Evaporated milk

Method

Cream butter or margarine and sugars, add egg yolks and beat well. Thoroughly sift together flour, baking powder and salt. Combine milk and vanilla; add dry ingredients alternately with milk mixture, beating at low speed just until combined. Beat egg whites until stiff, then fold in along with nuts. Pour into a well-greased tube pan; bake about 1 1/2 hours at 325 degrees or until done. Remove from oven and let stand in pan for 10 minutes before removing. After cake has cooled somewhat, ice with mixture of powdered sugar, remaining butter or margarine, and enough evaporated milk to make a spreading consistency.
