Cause-A-Riot Carrot Cake

This carrot cake starts with a spice cake mix and adds pineapple and walnuts in addition to the finely shredded carrots in the batter.
Ingredients
- 2 boxes spice cake mix
- 1 can crushed pineapple (drain and reserve juice)
- 1/2 cup chopped walnuts (optional)
- 1 cup golden (or brown) raisins
- 1 1/2 cups grated carrots
- 12 oz jar caramel sauce (you will need half of the jar)
- 32 oz container Philadelphia prepared cheese cake filling (found in the dairy department of some stores)

Method
I use 2, 9" rounds. Follow box directions for cooking times and prep, except use reserved juice, plus water to make up the difference, for the liquid needed. Add the nuts, raisins and pineapple to mixture, fill pans almost full to top, leaving about 1/2-inch; use any leftover batter as muffins, bake as directed or until toothpick in center comes out clean. Cool completely. Trim cakes to level, place first layer on plate and using the cheesecake mixture frost liberally and then place a thin layer of caramel; place other layer on top; use remaining cheesecake mixture to frost the sides liberally and the top thinly, use remainnig caramel sauce to cover the top. Chill and serve.
Notes: I use a pastry bag and medium star tip to pipe around the top edges to keep the caramel from running down the sides, and to decorate around the bottom.
