~ Cranberry Mayonnaise Cake With Cranberry Cream Cheese Frosting ~
- Servings: one 9" tube cake
|1 can||(1 Lb.) Whole Cranberry Sauce|
|3 cups||Unsifted All-purpose Flour|
|2 tsp||Baking Soda|
|1 cup||Chopped Nuts, optional|
|Grated Rind of One Orange|
|½ cup||Orange Juice|
|2 Tbsp||Butter or Margarine|
|2 cups||Confectioners Sugar|
|¼ cup||Reserved Cranberry Sauce|
|3 oz||Cream Cheese, softened|
Preheat oven to 350F; grease well a 9 x 3.5" tube pan or spring-form pan.
Reserve 1/4 cup of the cranberry sauce for frosting.
Sift flour, sugar, soda, and salt together. Add remaining cranberry sauce, nuts if using, mayonnaise, and orange rind; mix well. Stir in orange juice.
Pour into prepared pan and bake at 350F for about 1 1/4 hours.
Remove from pan, cool completely, and frost.
Combine all ingredients and beat with mixer until creamy.
**For a drizzle-type of frosting, I'm going to try mixing the frosting ingredients and then thinning with some milk or cream...I'm never that neat when it comes to completely frosting a tube cake and so drizzling an icing over the top of one is way easier for me.
**A festive garnish could maybe be whole fresh cranberries (choose small ones) arranged in little "star" bunches on top of the cake.
