Joanie's Sweet Revenge Chocolate Christmas Cake

Hand-chopped pieces of chocolate are combined with cherries, raisins, dates, walnuts & rum, and folded into applesauce-spice cake batter.
 

Ingredients

  • 1/2 cup margarine
  • 1 cup sugar
  • 2 eggs
  • 2 1/2 cups sifted flour
  • 1 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 cup applesauce
  • 1 cup chopped walnuts
  • 1 cup raisins
  • 1/2 cup chopped dates
  • 1/2 cup chopped marachino cherries
  • 1 cup chocolate pieces chopped into about 1/2-inch squares (I use Cadbury)
  • 1 Tbsp of rum

Method

Preheat oven at 350 degrees. Mix margarine, sugar, & eggs in a large mixing bowl on medium speed. Sift flour, baking soda, cinnamon, & nutmeg. Alternate flour mixture with applesauce into wet ingredients. In a separate bowl mix nut, raisins, dates, cherries, chocolate & rum, making sure all is coated. Then mix together with other ingredients. Put into greased and floured angel food cake pan; bake 1 hour and 15 minutes or until done.
