Juanita's Sweet Potato Cake

Mashed sweet potato is added to the batter, along with butter, brown sugar, nuts & spices. It's baked in a Bundt pan & covered with cream cheese icing.
 

Ingredients

  • 2 medium sweet potatoes
  • 2 1/2 cups flour
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 2 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 1 1/2 cup butter (3 sticks)
  • 3 large eggs
  • 1 Tbsp pure vanilla extract
  • 1 cup chopped walnuts or pecans
  • Silicone or nonstick Bundt Cake Pan
  • Icing:
  • 16 ounces cream cheese, softened
  • 1/3 cup butter, softened
  • 3 cups confectioners' sugar
  • 1 Tbsp pure vanilla extract
  • Walnuts or pecans (for garnish)

One hour before starting the cake, wrap 2 medium sweet potatoes in aluminum foil and place in oven on 450 degrees for 35-45 minutes or until fork-tender; remove potatoes from foil, take the skin off and mash potatoes in medium bowl; set aside. Turn the temperature down to 350 degrees and spray a Bundt cake pan with Pam and lightly flour; set pan aside. In large bowl, combine flour, baking soda, baking powder, sugar, nutmeg, cinnamon, and salt; set aside. In a mixing bowl, cream butter and brown sugar on low speed until well-combined. Add eggs, one at a time, and vanilla, scraping down the sides of the bowl after each egg is beaten in. Add mashed sweet potato. Gradually add dry ingredients; beat on low speed until incorporated. Fold in nuts until thoroughly mixed. Pour cake batter into Bundt cake pan and tap cake pan on table 2 times to get out any air bubbles that the batter may have; smooth the surface with a spatula. Bake cake about 1 hour and 10 minutes. When cake comes out of oven cool 10 minutes and invert onto a plate. Remove pan. Place in refrigerator to cool for 20-30 minutes before icing. While waiting on cake to cool, begin to prepare icing. For Icing: In medium mixer bowl, beat cream cheese and butter on medium speed until combined; gradually add confectioners' sugar and vanilla extract; beat on low speed until smooth. Take cake out of fridge and pour cake icing on top and garnish top of cake with walnuts or pecans.
