Lemon Blueberry Bundt Cake

An easy to prepare, delicious dessert that will brighten any occasion.

Ingredients:

Cake:
1 box Lemon Cake Mix
1 Small Pkg Vanilla Instant Pudding
4 Eggs
½ cup Vegetable Oil
½ cup Milk
1½ cups Blueberries, fresh or frozen
3 Tbsp Fresh Lemon Juice
2 Tbsp Fresh Grated Lemon Peel
Topping:
1 cup Powdered Sugar
3 Tbsp Fresh Lemon Juice
2 Tbsp Fresh Grated Lemon Peel

Directions:

Preheat oven to 350 degrees. Coat a bundt pan with nonstick cooking spray. In a large bowl, blend cake mix and pudding together. Add eggs, vegetable oil and milk, then mix until well blended. Add blueberries. Fold in lemon juice and lemon peel.

Pour cake batter into prepared pan. Bake for 35-40 minutes, until cake top is firm to the touch. Cool cake in pan for 10 minutes. Invert cake onto serving dish. In a small bowl, combine powdered sugar and lemon juice. When cake is completely cool, drizzle on icing and sprinkle with lemon peel.
