Light Coconut Cupcakes

White cake mix is baked as cupcakes, spread with thawed Cool Whip, then sprinkled with coconut -- either plain or tinted with food coloring, for special occasions.

  • Servings: 18-24

Ingredients:

1 Two-layer Box White Cake Mix
Fat-free or Light Frozen Whipped Topping, thawed
Coconut

Directions:

Prepare cake mix batter according to package directions and bake as cupcakes. Spread with fat-free or light whipped topping and sprinkle with shredded coconut.

Helpful Tips:

You can tint the coconut for different occasions -- I do green for Easter, red and green at Christmas, blue and pink for baby showers.
