Marble Molasses Cake

This cake recipe takes plain cake batter alternated with a darker batter containing molasses, cinnamon, cloves, and ginger, cut through with a table knife to give a swirled or marble effect.
 

Ingredients

  • 1/2 cup unsalted butter
  • 1 cup sugar
  • 2 eggs, beaten
  • 2 cups sifted cake flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 2/3 cup milk
  • 1 tsp. cinnamon
  • 1/2 tsp. cloves
  • 1/4 tsp. ginger
  • 3 tbsp. molasses

Method

Set oven at 350 degrees and grease a 9x5-inch loaf pan. Cream butter, add sugar gradually and beat until light and fluffy. Add eggs, one at a time, and continue to cream. Next add flour, which has been sifted together with baking powder and salt, alternately with milk. Beat until combined after each addition. Remove about one-third of the batter to another bowl. Add spices and molasses to this one-third of the batter and stir to combine. Drop batters by tablespoons into greased loaf pan, alternating light and dark mixture. Swirl. Bake at 350 degrees for 1 hour. Cool 10 minutes, then remove. Serve plain or frost with your favorite icing.
