Maui Waui Cake

This 3-layer cake has mashed banana and crushed pineapple in the buttermilk batter. The layers are brushed with rum and topped with an icing of coconut and macadamia nuts.
 

Ingredients

  • Cake:
  • 1 1/2 sticks (3/4 cup) butter, at room temperature
  • 1 1/2 cups organic sugar
  • 4 eggs, separated and at room temperature
  • 1 cup mashed ripe banana
  • 1 20-oz can crushed pineapple, well drained
  • 2 1/2 cups unbleached flour
  • 1 1/2 tsp baking soda
  • 3/4 tsp salt
  • 1 cup buttermilk, at room temperature
  • 2 tsp vanilla
  • 1/3 cup dark rum
  • Icing:
  • 1 stick (1/2 cup) butter
  • 1 can evaporated milk
  • 1 cup organic sugar
  • 3 egg yolks
  • 2 tbsp dark rum
  • 10 oz shaved sweetened coconut, lightly toasted
  • 4 1/2 oz macadamia nut pieces, lightly toasted
 
Method

Preheat oven to 350 degrees. Grease and flour three 9-inch round cake pans. Cream the 3/4 cup butter and the 1 1/2 cups sugar together until fluffy. Add the 4 egg yolks and beat well. Add banana and pineapple; mix thoroughly, stopping and scraping beater in process. Mix dry ingredients and add to butter mixture, beating at low speed just until combined. Blend in buttermilk and vanilla. Beat egg whites until soft peaks form, then gently fold into batter. Pour into prepared pans. Bake 25-30 minutes, or until a toothpick inserted in center comes out clean. Remove from oven, and using a toothpick, poke holes all over top of cake. Brush with the 1/3 cup rum until all is used. Cool in pans for 5 minutes, then turn out on a cooling rack to cool completely. .... Meanwhile, prepare Icing: Combine butter, evaporated milk, sugar and egg yolks in a saucepan. Heat over medium heat, stirring constantly, until thickened and bubbly, about 12 minutes. Cool slightly; stir in rum, coconut and macadamia nuts. Cool completely before spread icing between cake layers.

 

Notes: Please make sure banana is very ripe. Toasting the coconut and macadamia nuts makes all the difference in the world. Don't skimp on the rum--use a good quality dark rum.
