May Neufchatel Loaf Cake

Neufchatel cheese gives this cake a creamy and light texture and topped with the apple and peach jams, it is irresistible.
Ingredients
- 1 cup butter, softened
- 1 1/2 cup sugar
- 1 8-ounce Neufchatel cheese
- 5 eggs
- 2 teaspoon vanilla
- 2 teaspoon baking powder
- 2 cup flour
- 1 cup apple jelly
- 1 cup peach jam

Method
Preheat oven to 325F. In large bowl, cream butter and Neufchatel until creamy, add sugar, beat until smooth; add eggs; beat for 2 minutes. Add baking powder, flour and vanilla, beat until smooth. Batter will be thick. Pour into two greased loaf baking pans. Bake for 30 minutes or until a wooden toothpick inserted in center comes out clean. Cool on a wire rack for 5 minutes. Remove from pan. Spread apple jelly on one and peach jam on one loaf cake. Cool. Serve with fresh fruit and whipped cream
Notes: This is a very good cake and it freezes well too. You can use any kind of jelly or jam on top of cake. This is my original recipe.
