Mixed Berry Cheesecake

This berry cheesecake is worth your time with the mixed berry filling and dark chocolate topping. What a dessert.
Ingredients
- Crust:
- 2 cups vanilla wafer cookies, finely ground
- 1 stick unsalted butter, 1/2 cup melted
- Filling:
- 1 lb cream cheese softened
- 1 12 oz bag frozen mixed berries, thawed
- 3 large eggs
- 1/2 cup sugar
- 1/2 tsp vanilla
- Topping:
- 2 oz dark chocolate
- 2 tbsp butter

Method
Preheat oven to 325 degrees. To make crust, in a bowl combine ground vanilla wafers and melted butter together with a fork until cookie crumbs are well moistened. Treat a 8 inch springform pan with nonstick cooking spray, and press cookie mixture into pan coming up sides about an inch. Put crust in refrigerator for about 5 minutes. Puree mixed berries minus extra juice in a blender and set aside. Prepare filling using an electric mixer. Beat cream cheese on low until smooth, then start adding eggs one at a time. Next add sugar slowly until mixture becomes creamy. Add pureed berries to mixture and vanilla and continue beating until well mixed and creamy. Take crust out of fridge and pour cheese mixture into pan and smooth out top with a spatula. Wrap outside of springform pan with foil, and place pan in a large roasting pan and fill roasting pan with hot water about half way up sides of the springform pan. The foil helps keep water from leaking into springform. Bake cheesecake for 45 minutes. Turn off oven and allow to sit in oven for 30 minutes. Remove from water bath and oven and allow to cool for another 30 minutes. At this time you can prepare topping. In a small sauce pan melt dark chocolate and butter together until smooth and creamy. Once cheesecake has cooled for 30 minutes and chocolate topping is ready, drizzle melted chocolate over top of cheesecake. Chill in refrigerator for at least 4 hours. When it is chilled run a flat metal spatula around sides of pan and unmold ring. Transfer to a serving dish or platter to serve.
Notes: Before getting started a couple things you will need to start is an 8 inch springform pan, a large roasting pan that the springform pan can fit into and aluminum foil.
