Oh, My Banana Cake!

This tube cake not only has banana in the cake, banana pudding is poured into holes made in the cake after baking. Glaze with melted, canned frosting.
 

Ingredients

  • 1 Cup granulated sugar 1 Cup packed light brown sugar
  • 1/2 cup shortening
  • 1/2 cup butter, softened
  • 3 large eggs
  • 1 1/2 cups ripened mashed bananas
  • 1 1/2 teaspoons vanilla extract
  • 3 Cups all-purpose Flour
  • 1 1/2 Teaspoons baking powder
  • 1 1/2 Teaspoons baking soda
  • 1 Teaspoon ground Cinnamon
  • 1/2 Cup chopped walnuts
  • Pam or other Cooking spray
  • 1 3.9-ounce package instant banana cream pudding mix
  • 1 16oz can Vanilla Frosting

Prep time: 20 minutes (ready in approximately 2 hours) Preheat oven to 350 In a large mixing bowl, cream together sugars, shortening, and butter with a hand mixer. Add one egg at a time, beating well after each addition. Mix in bananas and vanilla. Add flour, baking powder, soda, and cinnamon. After mixing thoroughly, stir in walnuts. Lightly spray a 10-inch fluted tube pan with Pam. Pour batter into pan and bake 40-45 minutes or until golden brown and a toothpick comes out clean. Cool completely in pan on a wire rack. Use the handle of a wooden spoon to poke approximately 12 two-inch holes into bottom of the cake. Prepare banana pudding as directed. Immediately pour into holes on the cake. Cover and chill about 5 to 10 minutes; turn bundt pan over onto a cake plate and remove pan. Spoon half a container of vanilla frosting into a small saucepan. Over low heat, stir constantly until it becomes a glaze. Drizzle frosting over cake. Garnish with chopped walnuts if desired.
