Orange Vienna Sponge Cake

This sponge cake uses cake flour in the batter and adds both orange juice and grated orange peel for flavor.
 

Ingredients

  • 1 1/4 sifted cake flour
  • 1 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1 cup sugar
  • 1 tbsp. grated orange rind
  • 2 eggs and 1 egg yolk
  • 1/4 cup orange juice
  • 1/4 cup water

Method

Sift the flour once, measure, add baking powder and salt; sift together three times. Add 1/2 cup of the sugar and the orange rind to the whole eggs and yolk, and beat with rotary egg beater until thick and lemon-colored. Add remaining sugar gradually, beating thoroughly; then orange juice and water. Add flour gradually, beating with beater until smooth. Bake in an ungreased tube pan at 350 degrees for 55 minutes. Invert pan for 1 hour or until cold. Loosen and remove cake.

 

Notes: A mouth-watering decadent dessert. Use your favorite topping on sliced cake such as hot fudge drizzled chocolate, whipped topping with crushed nuts, ice cream, etc.
