Pepparkaka (Ginger Cake)

The batter for this single-layer cake includes not only ginger but also cloves and cardamom. There's also butter, sugar and eggs, plus sour cream to add a little tang.
 

Ingredients

  • 1/2 cup butter
  • 1 cup sugar
  • 3 eggs
  • 1 tsp. ginger
  • 1 tsp. cloves
  • 2 tsp. Cardamom (optional)
  • 2/3 cup sour cream
  • 1 1/2 cups flour
  • 1/2 tsp. soda

Method

Beat butter and sugar until light and fluffy. Add eggs and spices. Sift flour and baking soda together. Add alternately with sour cream. Stir until well blended. Pour into deep round cake pan (or 9x5" loaf pan) that has been buttered and sprinkled with bread crumbs (or flour). Bake at 325F for 15 minutes. Reduce heat to 250F and continue to bake for 30 minutes longer or until cake is done. (If you bake in a loaf pan, bake longer.) Freezes well.
