Pineapple-Upside-Down Cake in Cast Iron Skillet

This can be made in the Cast Iron Skillet or in a 9-inch round baking pan. If you want to make a semi-circle of pineapple slices cut in half you will need extra pineapple .I personally like this way- it's easier to cut cake and still looks great.

  • Cook Time: 45-55 minutes.


7 Pineapple Slices-or More If You Cut Them
¼ cup Butter ,melted
½ cup Brown Sugar,packed
Cherries, cut in half
2¾ cup All Purpose Flour
1 Teas. Salt
Teas. Baking Powder
½ cup Shortening,or Butter
1¾ cup Granulated Sugar
Teas. Cherry Juice
2 Eggs
1 cup Milk
¼ cup Pineapple Juice


Drain pineapple,reserve liquid. Halve slices(or use whole). Pour butter into 10-inch cast iron skillet (or 9-inch baking pan)Stir in the brown sugar and 1 T. of the reserved pineapple liquid. Arrange pineapple halve slices in a semi-circle in pan and place cherry halves cut side up in center of each pineapple and around pineapple. Combine flour.baking powder and salt. Beat butter about 30 seconds.Add sugar and cherry juice; beat till well combined. Add eggs, one at a time,beating 1 minute after each.Add dry ingredients and milk alternately to beaten mixture, beating after each addition;add pineapple juice and beat again.Pour batter over pineapple in skillet. Bake at 350^ for 45 minutes or till done when tested with a toothpick. Cool 5 minutes;invert skillet onto plate.
