Pumkin Cupcakes with Cream Cheese Frosting

Moist pumpkin cupcakes are topped with a silky cream cheese frosting.

¾ cups Whole Wheat Flour
¾ cups All Purpose Flour
1 tsp Cinnamon
½ tsp Ground Ginger
½ tsp Ground Nutmeg
½ tsp Allspice
1 tsp Baking Soda
½ tsp Salt
1½ cup Sugar
¾ cups can Pumpkin
2 Large Eggs
½ cup Vegetable Oil
½ cup Cream Soda
1 Tbsp Vanilla Extract
2 cups Graham Crackers Crumbs
8 oz Cream Cheese, softened
½ cup Unsalted Butter, softened
½ cup can Pumpkin
3 cups Confectioners Sugar


Combine together the flours, spices, baking soda and salt. In a large bowl, combine the sugar, pumpkin and eggs. Beat until smooth. Mix the oil, cream soda and vanilla into the mixture. Slowly add the flour mixture and mix well. Stir in the graham crackers. Fill cupcake liners 3/4 full. Bake at 350 degrees for 20-25 minutes.


Mix cream cheese and butter until smooth and creamy. Mix in pumpkin. Slowly mix in the confectioners sugar. Frost each cupcake.
