Ruby Red Grapefruit Orange and Banana Cake

This citrus cake has a fresh taste that goes great with tea.
 

Ingredients

  • 2 1/2 cups flour
  • 2 cups white sugar
  • 1 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 3 eggs
  • 1 cup canola oil
  • 1 banana, smashed
  • 1/2 cup ruby red grapefruit juice, freshly squeezed
  • 1/2 cup orange juice + 2 tablespoons for icing, all fresh squeezed
  • 12 oz sour cream
  • 2 tbsp orange zest + 2 tablespoons for icing
  • 1 tsp grapefruit zest
  • Cream Cheese Icing:
  • 2 8 oz package cream cheese, softened
  • 3/4 cup butter softened
  • 2 tbsp orange juice
  • 2 tbsp orange zest
  • 1 tbsp whipping cream
  • 1 tbsp vanilla extract
  • 7 cups confectioner's sugar

Method

Spray 3 nine inch round cake pans with nonstick baking spray. Preheat oven to 350 degrees. Sift together flour, sugar, baking powder, baking soda and salt. Place mixture into a stand mixer. Add eggs and mix until combined. Add oil and mix until blended. Add grapefruit, orange juice and banana then mix until smooth and creamy. Add sour cream and zest then just mix until combined and smooth. Place cake batter into cake pans and bake 25-35 minutes or until a tooth pick comes out clean. When done, turn pans onto cooling racks let stand to cool about 1 hour before icing. Serve with a scoop of dream sickle ice cream on the side and garnish with a sprig of mint. Cream Cheese Icing:In a mixer, cream together cream cheese and butter. Add whipping cream and mix on high for about 30 seconds then slow mixer on low. Add vanilla while mixing and slowly add confectioner's sugar and mix until creamy and spreadable.
