Shima's Carrot Cake

Brown sugar, cake flour, nutmeg, cinnamon and mace are combined with grated carrots and soaked raisins in this tube cake.
 

Ingredients

  • 1 1/2 cups light brown sugar
  • 3 egg yolks
  • 1 cup vegetable oil
  • 1 1/2 Tbsp hot water
  • 1 1/2 cups sifted cake flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1 tsp cinnamon
  • 1/4 tsp mace
  • 1 cup grated carrots
  • 1 cup raisins (pre-soaked)
  • 3 egg whites
 
Method

Beat together brown sugar, egg yolks, and oil along with the hot water. Sift together flour, baking powder, baking soda, salt, nutmeg, cinnamon and mace. Add to egg yolk mixture, then add carrots and raisins. Beat egg whites until stiff; gently fold into mixture. Spread batter in a well-greased 10" tube pan. Bake in a preheated 350 degree oven about 55 minutes. Let cool for 10 minutes before removing from pan.
