Sourdough Chocolate Cake

The slight yeasty flavor in this cake comes from the sourdough starter. There's also melted chocolate, cinnamon and soda in the batter.
 

Ingredients

  • 1 cup sourdough batter
  • 1 cup sugar
  • 1/2 cup shortening
  • 2 eggs
  • 1 cup evaporated milk
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 3 1-ounce squares semisweet chocolate
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking soda

Method

Prepare sourdough batter 8-12 hours before baking Sourdough Chocolate Cake. Cream sugar and shortening until light and fluffy. Beat in eggs, one at a time. Stir in sourdough batter, milk, vanilla, cinnamon and melted chocolate. Beat on medium-high for 2 minutes. Combine flour, salt and baking soda; fold in until batter is smooth. Pour into two, 8- or 9-inch greased and floured round cake pans. Bake at 350 degrees for 25 minutes. When done, cake will spring back when pressed lightly with fingers, and will shrink slightly from sides of pan. Cool completely before serving. Dust lightly with powdered sugar or frost with icing.
