Strawberry Cake & Icing

A white cake mix with strawberry Jell-O and frozen strawberries added is baked, cooled, and frosted with a powdered sugar and butter mixture containing more berries.
 

Ingredients

  • Cake:
  • 1 pkg. 2-layer-size white cake mix
  • 1 pkg. strawberry gelatin
  • 1 cup cooking oil
  • 1/2 cup water
  • 4 eggs
  • 1/2 of a 10 oz. pkg frozen sliced strawberries in syrup, thawed
  • Icing:
  • 1 stick margarine, softened
  • 1 box powdered sugar
  • 1/2 of a 10 oz. pkg frozen sliced strawberries in syrup, thawed

Method

Place cake mix, gelatin, oil, water, eggs and 1/2 cup strawberries in a bowl & mix well. Pour into greased and floured 9x13 pan. Bake at 350 for 35 to 40 minutes. Allow cake to cool completely before icing. Icing: Beat margarine; add powdered sugar gradually until smooth. Drain off and reserve syrup from remaining strawberries. Beat in berries and enough of the syrup until of desired icing consistency; spread over cooled cake.
