Super-Moist Carrot Cake

The batter for this 2-layer carrot cake contains applesauce, as well as the usual ingredients--including very finely chopped carrots and cinnamon.
Ingredients
- 2 cups sugar
- 2 cups flour
- 1 cup applesauce
- 1/4 cup cooking oil
- 2 tsp soda
- 2 tsp cinnamon
- 3 cups very finely chopped carrots
- 4 eggs
- 1/2 tsp salt

Method
Combine all dry ingredients in large bowl; add eggs, applesauce, oil and carrots. Mix well; pour into 2, 8-inch round greased and floured cake pans. Bake at 350 degrees for 35-40 minutes or till done. Let cool 10 minutes; remove from pans. Cool completely and frost with cream cheese frosting: 1-8 oz pkg softened cream cheese; 1-stick butter, softened; 1-box powdered sugar & 1-tsp vanilla.
