Sweet Potato-Apple Spice Cake

This cake batter combines mashed sweet potatoes with applesauce, buttermilk and spices. It's baked in loaf pans, cooled and sliced to serve.
 

Ingredients

  • 2 1/2 cups flour
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 3/4 tsp nutmeg
  • 1/2 tsp ground cloves
  • 1/4 tsp baking powder
  • 1/4 cup (unsalted) butter, softened
  • 2 cups sugar
  • 2 eggs
  • 1 cup applesauce
  • 1 cup mashed sweet potatoes
  • 3-4 Tbsp buttermilk

Method

Grease and flour 2 loaf pans. Preheat oven to 350 degrees. Sift together first 7 ingredients. In a separate bowl cream butter. Add sugar to creamed butter; beat till mixed. Add eggs, one at a time, beating 1 minute after each. In a separate bowl combine applesauce, mashed sweet potato and buttermilk till well blended. Add dry ingredients and sweet potato mixture alternately to beaten sugar mixture. Beat just until combined after each addition. Turn into loaf pans and bake for 40 minutes to an hour or till done. (Each oven is different so times will differ.) Insert a toothpick into center of loaf and if it comes out clean, then it is done. Cool 10 minutes in pan; remove and cool on wire rack.

 

Notes: I use my own home-grown sweet potatoes so my potatoes have more moisture than canned sweet pototoes. So you can add more (or less) buttermilk to mixture. Batter should be like a thick cake batter.
