Thanksgiving Sunflower Bundt  Cake

A moist, spicy cake studded with sunflower seeds is a quick breakfast surprise on a busy kitchen morning.

Ingredients:

Glaze:
⅓ cup Light Brown Sugar
3 Tbsp Unsalted Butter, melted
2 Tbsp Half & Half
Cake:
1 Yellow Moist Cake Mix
½ cup Milk
½ cup Water
⅓ cup Oil
3 Eggs
1½ tsp Cinnamon
½ tsp All Spice
¼ tsp Nutmeg
¼ tsp Black Pepper
¾ cup Roasted Sunflower Seeds, divided
Brown Sugar Drizzle:
½ cup Brown Sugar
2 Tbsp Water
1 Tbsp Butter
4 Tbsp Half & Half

Directions:

Preheat oven to 350 degrees. Spray a sunflower bundt pan with cooking spray. Prepare glaze by whisking the sugar, butter and half and half creamer in a small bowl. Coat the inside of the pan with the glaze, focusing on the center and alternate petals. A basting silicon brush works well. Place the dry ingredients from the package mix in a large bowl. Add the milk, water, oil and eggs. Blend, then add the spices and mix for two minutes. Fold in 1/2 cup sunflower seeds. Sprinkle the rest of the seeds on the inside center of the pan and fill the pan with the batter. Bake according to package directions for 39-45 minutes. Check for done and remove. Cool in pan for 5 minutes and loosen cake from sides. Cool for another 5-10 minutes and remove from pan. To serve prepare brown sugar drizzle by putting the brown sugar and water in a small saucepan and heating until boiling. The sugar will melt and it will become golden in color. Whisk in the butter and half and half, then heat through. Place cake on a serving platter and drizzle center and top of cake using half of the drizzle. Add more sunflower seeds to top. Slice and place each piece on a plate and drizzle the plate and cake with brown sugar drizzle sauce.

Helpful Tips:

Bake it the night before for a beautiful breakfast! I used a mix to make and bake it quickly in my beautiful sunflower bundt pan! Thanksgiving is a special time. It is our family’s favorite holiday. Food and family!
