Uptown Girls 24 Karat Gold Cake

This spiced cake has cranberries, carrots, and mango stirred in. Fill the cake layers with a coconut-pecan filling and frost with a lemony cream cheese frosting.
Ingredients
- For cake:
- 2 cups all-purpose flour
- 2 tsp. baking soda
- 1 tsp. baking powder
- 2 tsp. ground cinnamon
- 1 Tbsp. minced fresh ginger
- 1 tsp. fresh grated nutmeg
- 1 tsp. salt
- 3 large eggs
- 1/2 cup mayonnaise
- 1 1/4 cups packed light brown sugar
- 1 cup seeded, peeled, and diced mango
- 1/2 cup mango nectar
- 2 cups finely shredded carrots
- 1 cup dried cranberries
- 1 cup pecan pieces
- For Coconut Pecan Filling:
- 1 cup evaporated milk
- 1 cup sugar
- 3 egg yolks
- 1/4 cup unsalted butter
- 1 tsp. vanilla
- 1 (3.5 oz) can flaked coconut
- 1 cup chopped pecans
- For Lemon Cream Cheese Frosting:
- 1 (8-oz) pkg. cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 1/2 tsp. vanilla
- 1 Tbsp. finely shredded lemon peel

Method
1. Preheat oven to 350 degrees. Grease and flour 2 9-inch round cake pans; set aside. 2. Combine flour, baking soda, baking powder, cinnamon, ginger, nutmeg and salt in mixing bowl; set aside. 3. In another bowl combine eggs, mayonnaise, sugar, mango and nectar; blend ingredients together, then whisk into dry ingredients. 4. Fold in carrots, cranberries and pecans. Divide evenly between two prepared pans. Bake for 50 minutes or until toothpick inserted in center comes out clean. Cool in pans on racks for 10 minutes. Turn cakes out on the rack and cool completely. 5. For filling, combine evaporated milk, sugar, egg yolks, butter and vanilla in saucepan. Cook over medium heat, stirring constantly until mixture thickens. Add flaked coconut and pecans, stir until ingredients are well incorporated and mixture is spreadable. 6. For frosting, beat cream cheese and butter together until fluffy. Add powdered sugar and beat until blended. Blend in vanilla and lemon peel. 7. To assemble, place one cake layer on serving platter, spread Coconut Pecan filling over surface, top with remaining cake. Frost tops and sides with Lemon Cream Cheese Frosting.
Notes: What a great way to slip in so many fruits and vegetables and still call it dessert. Mango is a great addition to baked goods-it brings a lot of taste with little calories.
