Vintage 1950's Danish Apple Pie (Cake)


Sweet apples and pecans baked into a moist and delicious cake.



Ingredients:

  • 2 eggs
  • 1 1/2 cup sugar
  • 1 cup flour
  • 2 tsp baking powder
  • 1 scant tsp salt
  • 1 tsp vanilla
  • 1/4 tsp nutmeg
  • 2 cup diced apples
  • 2/3 cup pecans, chopped coursely

Method

Mix eggs and sugar thoroughly. Add dry ingredients plus vanilla and nutmeg, mix well. Add apples and pecans, mix. Pour batter into a 10 inch pie plate, or small tin. Bake at 350 degress for 30 to 35 minutes. Test with toothpick that cake is moist but not too wet, before removing from oven.

Notes: This is right from Grammy's recipe card. And it tastes it. Serve with vanilla ice cream or home made whipped cream. I prefer Golden Kernel brand pecans.
