Walnut Carrot Cake

This 2-layer carrot cake is made easier with a yellow cake mix. Salad dressing and eggs add richness; cinnamon and an almond-flavored frosting add flavor.
 

Ingredients

  • 1 18-ounce pkg yellow cake mix
  • 1 1/4 cups Miracle Whip
  • 4 eggs
  • 1/4 cup water
  • 2 tsp ground cinnamon
  • 2 cups finely shredded carrots
  • 1/2 cup chopped walnuts
  • Frosting:
  • 1/2 cup shortening
  • 1/2 cup real butter, softened
  • 4 cups powdered sugar
  • 2 tbsp milk
  • 1 tbsp almond flavoring
  • Food coloring
  • Sprinkles
 
Method

In a mixing bowl, combine first five ingredients and mix well. Stir in carrots and nuts. Pour into a greased round cake pans and bake for 30-35 minutes, at 350 degrees, until a toothpick inserted comes out clean, then cool completely. Mix together frosting ingredients. Place cake on a platter. Frost top of cake and place second cake on top. Frost top and sides of cake, then use food coloring to add desired colors. Pipe border around top and bottom of cake. Apply sprinkles on top and sides of cake.
